In the Kitchen with Gram...Cornflake Cookies!

ME. WANT. COOOOOOKIE!!!!!

Gram and I decided to do something "easy" this week, as she's feeling little punk right before her plasmaphoresis for her Myasthenia Gravis. Sooooooo, we picked these little guys.


Ever heard of Cornflake Cookies? My fave. Even if they don't contain chocolate! Seriously...so yummy.




So, want me to stop jabbering and start telling you how to make them? Okay!!


First of all, grab yourself a "monster" (not really, just sometimes, most particularly when something isn't going her way...) to crush up your cornflakes.




While she's crushin', you're gonna start mixin'. Grab some Crisco (I wanted to say "grab your fat" but I didn't want to offend you.) and toss it into your mixer along with the sugars and cream those bad boys.




Oh, and don't forget the vanilla!




Institute more child labor and ask previously mentioned "monster" to beat a coupla eggs for you, then add those in to the mixing bowl.




Mix it all up and then add the rest of your dry ingredients. 



You might want to take notice at this point to make sure you're following the actual cornflake cookie recipe and NOT your chocolate chip recipe (right Gram?!). Then heave a sigh of relief when you realize the two recipes start out nearly the same.




Now, after everything is all mixed up, clean off the mixer paddle with your fingers...like Gram always says, "A good cook isn't afraid to get her hands dirty." Okay, I lied, she never said that...it just sounded good.






Now, you add your previously crushed, but not pulverized, cornflakes. You don't want them crushed too much, you want them to offer a good crispiness to the cookies!




Next up, the coconut! Yum. I know some of you are coconut haters and I will never understand that. But I think we can still be friends. I'm glad we agree on that.




Toss 'er in and stir it up! I'll warn you, you'll need a sturdy spoon for the stirring. And a strong arm. You might want to lift weights first. But that step is up to you.




Grab your handy little cookie scooper (not to be confused with your handy little pooper scooper...grody) and plop your cookies on a parchment (or not) lined cookie sheet!




You're cookies are done when they are nicely golden brown. And delicious. Heavenly. Sinful. Wait. Can something be "Heavenly" AND "sinful" at the same time?

I think yes. And these totally are!




Gram's Cornflake Cookies
Printable Recipe


1 c. shortening
1 c. brown sugar
1 c. sugar
2 beaten eggs
1 1/2 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 c. coconut
4 c. coarsely crushed cornflakes (say that 5x, fast)


Preheat oven to 350*F. Cream shortening and sugars, add eggs and vanilla, mix together. Add flour, powder, soda, and salt and mix together. Gram says, "DON'T OVERBEAT YOUR BATTER!". Stir in coconut and cornflakes.
Drop by rounded spoonful (or handy dandy cookie scooper) onto cookie sheet and bake 12-15 minutes or until golden brown.
