In the Kitchen with Gram...Bread Machine Coffee Cake!

My Gram loves her bread machine and has adapted many of her doughs to be made on the "Dough" mode of her machine! This is one of them...her Apple Coffee Cake. So tender and light and YUMMY.

Oops, excuse me...one too many pieces of coffee cake!



Okay, first up, get your machine out. ;)

Then...dry ingredients (FYI, we did a double batch, but I'm going to give you the recipe for a single batch):









And buttah. Mmmmmm...love the buttah.



Put the pan thingamajig into the bread machine, then add the wet ingredients, which are (prepare yourself for this long list): egg and water.



Phew. Didja get all that?

Pour it on top of the dry ingredients and then...



And then this is where I hail bread machine makers everywhere...the yeast compartment? INGENIOUS DUDES. Like, for real. Brilliant.

So, add the yeast to the yeast compartment doohickey:



Then, set your machine to "dough mode" and let 'er rip.

While your dough is being created for you, let's get to the filling.

Melt a glob of butter in a pan:



Cut up some apples into the hot butter:




Add desired amounts of sugar and cinnamon and a dash of salt and cook away. They will GREATLY reduce in size.



When your brilliant bread machine tells you to, take out your dough and put it in a greased bowl to "rest" and cover it with plastic wrap...allow it rise for about 20 minutes.



Grease a pan:



And make some icing.

To a bunch (1 cup? 1 1/2 cups?) of powdered sugar add a dash of salt:




A glob of butter:



And a generous splash of vanilla:



Then, add just enough milk to make it "drizzleable".



When your dough is ready, flour a work surface:



And turn the dough out onto it.



Work the dough just a bit, to get it manageable (it'll be quite sticky at first):




Then roll it out into a rectangle and spread your filling mixture on one half (short side) of the dough:



Gram says she finishes her coffee cake "Polish style...just flop it over and pinch the edges shut!"...we Pollack's aren't too fancy! ;)



Put the coffee cake into the buttered pan and bake away!



Glorious.



Now, drizzle on your icing while the cake is still warm so that the icing gets all melty and drippy. Yum.



Serve it up with a cup of coffee (or heck, as dessert, like we did tonight!) and enjoy!!



Gram's Bread Machine Apple Coffee Cake
Printable Recipe


Dough:
2 1/4 c bread flour
3 T sugar
1 tsp salt
2 T dry milk
2 1/2 T butter
1 egg + enough water to make 1 cup
1 tsp yeast

Filling:
2 T butter
1-2 tart apples, peeled cored and cut into approx 1 inch pieces
dash of salt
Sugar and cinnamon to taste (start with a smallish "gram handful" of sugar and a generous amount of cinnamon)

Icing:
Powered sugar (start with 1 c, add more powdered sugar and more milk if you need more icing)
dash of salt
2 T butter
1 tsp vanilla
Milk (enough to make the icing easy to drizzle)


In bread machine pan, combine first 5 ingredients, place pan in machine and add water and egg. Close machine and add yeast to yeast compartment. Set machine to dough mode and wait for signal that it is done. Remove from pan into greased bowl, cover with plastic wrap and let rest 20 minutes.

Meanwhile, make filling. Melt butter in pan over medium-medium high heat. Add remaining filling ingredients and cook until apples are tender, stirring frequently. Remove from heat until ready to use.

When dough is done "resting" remove from bowl and work on floured surface until manageable (do not over work or your dough will get too elastic and springy). The dough will be quite sticky. Roll out into rectangle about 15 inches long and 7 inches wide. Place filling on one side (short side) of dough, fold other side over and pinch shut.

Allow to rest another 20 minutes, then bake at 350* for 20-25 minutes, or until lightly golden brown on top.

Remove from pan and drizzle with icing. Serve warm with a cup of coffee and enjoy!
