1. What is an acceptable age for girls to start dating?
Um...never? Okay, okay, okay...30.


30 and suitors must complete a rigorous interview process beforehand.

Ugh. Fine. I'm kidding. I want my girls (and boys) to be married with children by the time they're 30, so the dating process can commence at age 23, and not a moment prior.

2. Do you think your kids should have summer homework?

NO!!! A big, fat, resounding NO!!


Summer is our time off...and I'm a firm believer in learning through living. Just because my kids aren't in school, doesn't mean they aren't learning...sure, they're not doing worksheets and assignments, but we're learning. Trust me.

Also, I'm a big believer in NO homework. My children are at school for 7 hours a day, I feel that is sufficient time for them to get the work done that they need to do. (Barring sick days and make up work, of course.)

Studying for tests? Sure, that goes, but average, everyday work? Please don't ruin the little time I get with my kiddos in the evenings by giving out oodles of homework!!

3. Would you prefer to live without AC or heat?

Well...here in good ol' MinneSOOOOOOta, we can't live, literally, without heat. We would die.


Yes, I am serious.

Our pipes would freeze and burst and we would turn into people shaped icicles.

With temps that drop WELL below freezing (-50 degrees, anyone? Okay, that's rare...but -30? Bet we see that every winter.) it becomes a hazard to one's health to not have heat.

So that is my final answer: AC. I can live without AC. (I do, indeed, live without it...)

4. What the worst thing about staying in a hotel? (Besides not being with your family)

For one thing? Those stupid hotels that use flat sheets in place of fitted sheets. I pulled out my most princessiest princess once upon a time and asked for a fitted sheet and guess what?


They had them.

I guess they save them for the princesses. (Or, you know, the really high maintenance guests, like me.)

5. So, do your kids really get "104 days of summer vacation"? (Bonus points for those of you that get this reference!)

No. Fer dumb.

We counted today, and, at best, we get 101 days...and that's if Labor Day is late.

Here's what my ideal school calendar would look like: School in session January, February, and March...off the rest of the year. Whaddya think?

Alright, I'll give you the last week in December and all of April until the snow stops and the weather warms up.

Thursday Night 5QF Sneak Peek!

Oh, what a couple of days it's been!



Our washing machine broke. B-R-O-K-E, broke. Like, metal parts fell apart. Unsalvagable. Broken.

So, every waking minute (and prolly some sleeping ones, too) has been consumed with washing machine research. Front load/top load/GE/Whirlpool/Samsung/LG...good golly. It's ridiculous.

Top that off with baseball playoffs and WHOA NELLY!!! Someone hold me.

All that to say, I'm sorry for the late 5QF sneak peek...please forgive me!

Life and death...but mostly, death.

Yesterday, Baby Girl and I were sitting in the living room, hanging out when we heard a BANG against the window and saw a bird fall to the deck.

We went to the window, where we saw the bird laying there, moving it's beak, and I said, "Sometimes the birds just need some time to get back up, then they'll fly away. They don't always die.". She and I watched while the beak moving became less and less...until it was nothing.

I began to formulate lots of "well honey, everything dies" comments and imagined the bird funeral we'd hold later and waited for the horror and the tears and the sadness...turns out, I shouldn't have worried.

Baby Girl took one last look, declared, "Yup. He's dead." and walked away.

Well then. Okay.

Carry on.

The Countdown is On!!


Guys?

Three and a half days.

That's it...3 1/2 days of school left and then it's "104 days of summer vacation, and school comes around just to end it!" (Name that ditty.)



I'm not sure who looks forward to summer vacation more, me or my kids. Last year held a lot of promise, and then approximately 3.2 hours into summer vacation I was sick and tired of the bickering and fighting and declarations of "I'M BORED!" and I packed up my hot, sweaty kids and my grumpy, hot self and we hauled our butts down to Sam's Club and bought a trampoline.

"HA!" I declared, "That'll show 'em."

It kinda worked.

But this summer vacation? I'm determined to not let there be ANY bickering and fighting...at the first utterance of "I'M BORED" I will provide them with a list of chores that need to be completed...*insert evil motherly laugh here* mwuahahahahahaha!!! That'll show 'em!

Then, the rest of the summer should be a breeze, right?

Actually, the rest of the summer is proving to be crazy busy. Grad parties, family vacations, the boys going to the Boundary Waters, and house projects GALORE (we have our OWN grad party to look forward to next year...WAAAAAAAA!!!)...yeah, I think we'll stay occupied!

Anyway, the countdown is on. Only 3 more "school nights" until summer vacation!

Then, let the party begin!!

Alright. It's late (just got home from work), I'm tired, and I've gotta be up bright and early to get kids to school. Boo.

1. Do you wake before the alarm or stay in bed until the last possible second?
Oh dear Heavens. I stay in bed until the last...and I mean the absolute last minute. My sleep is precious.


Isn't it crazy how some people can get by on less sleep than others? I am a "solid 8 at a minimum" kind of girl but my hubby? 5ish'll do for him. I don't get it. I would die. Absolutely, positively DIE if I could only get 5 hours of sleep a night.

Plus, people would hate me. I get a little cranky when I don't get enough sleep.

Yeah, I'm still kind of a toddler, I guess.

2. Who should get a baby shower? Is it just the first baby or all babies?

I'm beginning to think this is another "North vs. South" kind of thing.


Up in these parts, you get a baby shower for your first. And that's it. Unless you have special circumstances...like a giant gap between children or a remarriage or something like that.

Otherwise, one party, and you're on your own!

It seems that you Southerners get a shower for each baby...is this really how it is? 'Cuz damn, if it is, I wish I would've lived in the South when I was birthing babies!! ;)

I like presents.

3. How will you spend Memorial Day?

Probably planting the garden, raking the left over leaves from fall, working on the closet project...so many things to do and not enough time, so hence, we work on holiday weekends.


I'd love to be camping with my kids. Cooking hot dogs over an open flame and going to bed with melted marshmallow in our hair and dirt on our faces.

Camping always seems more "glamorous" than it is. I love and I mean LOVE our bed, so tearing me away from it to sleep on a hard mattress in a pop-up camper is kinda tough. But, I'd love to start camping again...perhaps this summer will be the summer we do it!

4. Do you have a Storm/Hurricane/Tornado/Fire plan for your kids, house..?

Yes. Sorta. Mostly. All the kids know that in severe weather we head to our basement, Pal's room specifically, if it gets really bad. But, well, we're not so good about the fire plan.


We've talked about getting out, staying low to the ground, and once upon a time had a "meeting tree"...but even I've forgotten which tree that was.

I think it's time to re-do our fire plan. And, maybe even be good parents and have a fire drill one of these days.

5. What is your favorite morning drink?

Mmmmmmm...coffee.

Coffee with a bit of International Delight Cinnabon creamer and a bit of French Vanilla creamer. It's as close to my Warm Cinnamon Sugar Cookie creamer as I can get.

I love just vegging with my baby until that one cup of coffee is gone, THEN we can start our day.

Now I'm looking forward to morning!

Thursday 5QF Sneak Peek!

Hauled my butt in to the chiropractor today, after being beaten down by a sore neck/shoulder...I waved my white flag and decided that I needed a little help. My Biofreeze/heat pack combo just wasn't cutting it anymore! Boo. Anyway, the chiro clinic I go to believes in a "light manipulation" approach and uses more stretching and massage which I LOVE.


I kind of wanted to stay there all day.

Anyway, gotta work this evening, so wanted to get the sneak peek up before I head out!

In the Kitchen with Gram...4 Layer Dessert!!

Friends, Danish Junket makes the world go 'round.

And it sure makes this dessert incredibly delicious!


This one is actually my great-aunt Jean's recipe, but Gram made a big (read: incredible!!) change to it...the original recipe called for a chocolate pudding layer, which Gram substituted with Danish Junket and raspberries. 




Yum diggity.


What is "Danish Junket" you ask? Well, to my non-culinary trained eye, it appears as though it is some sort of raspberry flavored gelatin. I'm not sure what makes it Danish. Or junket (isn't that a bird?), but whatever it is, I'll take it...'cuz it is so yummy!


Okay, let's start with the crust.


Butter, flour and chopped pecans:




Spread into a greased 9x13 pan and bake (it's not easy to spread, Gram says using your hands works best!):




As the crust bakes, cook your 3rd layer, which is the Danish Junket, cooked according to the package directions:





While the crust is cooling, mix up the 2nd layer, which is cream cheese, powdered sugar and Cool Whip:



When the crust and the junket are cool, assemble. The cream cheese mixture goes on top of the crust...be careful, the crust is not a solid, stable crust. It works best to plop the mixture into small mounds, then carefully spread it out from there!



Carefully being the key word.




Next up, raspberries:



Then, the junket over the top.




Now, you could do one of two things, cool the junket so it sets up completely before spreading with Cool Whip (the 4th layer) OR, do like we did and just dive in with the final layer of Cool Whip.




Which lead to some pink swirls on the Cool Whip...but hey! Pink swirls are all the rage now, so go for it! Wait. What? When did pink swirls become all the rage?

Now I'm confused. ;)


Chill for several hours, or overnight, cut into squares and enjoy!





Gram's 4 Layer Dessert 
Printable Recipe




Crust:
1 stick softened butter
1/2 cup flour
1/2 cup chopped pecans (optional)

Preheat oven to 375*F. Combine all, spread into greased 9x13 pan and bake for 15 min. Allow to cool completely.


2nd layer:

8 oz cream cheese, softened
1 c. powdered sugar
1 c. Cool Whip (save remainder of container for 4th layer)

Combine all, spread on cooled crust. Works best to "plop" little mounds of this layer onto crust and CAREFULLY spread out.


3rd layer:

2 packages Danish Junket cooked according to package. Cool.
2 c. fresh raspberries

Sprinkle raspberries on top of cream cheese layer, then poor cooled Danish Junket over raspberries.


4th layer:

Remaining Cool Whip

Spread Cool Whip over the top of the junket. For a "cleaner" (i.e. non-pink swirly) topping, allow junket to set up before spreading final Cool Whip layer on. If pink swirls are your kinda thing, then just immediately follow junket layer with Cool Whip layer.


Cover with plastic wrap and chill for several hours or overnight before spreading!

I'm not sure what it is, but I'm in love with these photos! Concentrating so hard on the game she was playing...her face light by the light of the computer screen...I just love it!

Mostly, I just love her.

Today is my baby bro's birthday...in a couple of months, he will be moving out of state to attend dental school for three years. THREE YEARS!!!! Crazy.

He's growing up.

1. Do you have a doppelgänger?

My dad just informed me that yes, I do, and she lives in the next big town over.

He said he was at the (dentist? mechanic? salon? I can't remember) and there was someone there that looked just like me and had my same mannerisms, right down to the eye rub that I never knew I did!

Crazy. I always wonder if people "recognize" their own doppelganger? You know, say I saw that some woman as my dad did, would I think "OMG! She looks like me?!" or do you not recognize your own features in someone else?

My baby girl has been doppelganged (can I verb that?) as a mini Reese Witherspoon. I've had so many people tell me that and then a barista at Caribou stopped in her tracks the other day and was all, "Oh my gosh. You are a tiny Reese Witherspoon!"...cracked me up! I've never had random strangers tell me that!


2. Do you keep your car cleaned up?

Um. Ahem. Ah. No.

Not at all.

I feel like I'm always responsible for bringing so much stuff in (purse, keys, mail, coffee cup, kids) that I don't have enough arm space to clean up the crap.

And my kids aren't good about it either. I don't really so much care, unless I'm driving someone around, then I try to get it cleaned up...and go get my oil changed at WalMart, cuz they give you a complimetary vacuum! Boom.


3. What is a current fashion that drives you crazy.

Ugh. So many. Skinny jeans, flowy shirts, hats...and only because I can't pull them off.

I love them on other people, but they just don't work on me!

Also, skinny jeans on men. Gross.

4. How often do you go grocery shopping?

I used to try to do one big grocery trip a month, then I had a whole slew of kids and grocery shopping with them became so much of a chore that I just avoided it and began just running in for "one or two things for supper" here and there when my oldest kids got old enough to hang out in the vehicle with the younger ones.

I know, Mother of the Year. But the oldest was old enough to baby sit, so I figure, really, he was just babysitting, in the car.

Or, at least, that's how I saw/see it! ;)


5. What has been the best surprise of your life?

I am going to say my oldest and youngest child. They were the biggest surprises of my life...my youngest seeming almost more so, sometimes...and I am so overwhelmed with joy that it sometimes makes me a little teary.

As many of you probably know, I really struggled when I found out I was pregnant with my baby girl. I was overwhelmed and tired and stressed and I just didn't think I could do it again.

And then? Well, then she turned out to be the perfect finale for our family. The icing on the cake. The most amazingly wonderful, spunky, stubborn, grumpy little love bug that I never knew I needed.

I thank God that he knew better than I did about what I REALLY needed.

Excuse me now, I need to go snuggle my baby.
